Grilled Pork Pineapple Kebobs

As you’ve probably noticed I’m been on a fresh pineapple kick lately, especially when it’s grilled. I love pineapple paired with pork and wanted to make a recipe that can be made in less than 30 minutes.

I’ve been traveling quite a bit for our Latin Twist Texas book tour and was so excited to come back home. It felt like I was gone forever. I was gone for 12 days, which is the longest stretch I’ve been away from my family. I was homesick and ready to come home. This was our first family meal upon my arrival. I was excited to spark up the grill and cook with my children and eat dinner as a family. This recipe was a hit and will be one I grill again this summer.

Pork-Pineapple Kebobs with Honey Chipotle Barbecue Sauce

If you want to make an impression make these simple kebobs with pork loin chops cooked to juicy grilled perfection. And the tangy, sweet, and spicy barbecue sauce is easy to make and is finger-licking good.

Ingredients

Honey Chipotle Barbecue Sauce:

  • 1 can tomato sauce, 8 ounces
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 1 tablespoon molasses
  • Juice of 1 lemon
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 1/2 teaspoons prepared mustard
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried oregano
  • 1 chipotle pepper in adobo sauce, minced
  • 1/8 teaspoon pepper

Kebobs:

  • 4 6- ounce boneless pork loin chops, cut into 2-inch cubes
  • 1 pineapple, peeled and cut crosswise into 2-inch-thick slices
  • 1 red bell pepper, stemmed, seeded, cut into 2-inch squares
  • 1 green bell pepper, stemmed, seeded, cut into 2-inch squares
  • 1 red onion, cut into 2-inch squares

Instructions 

Honey Chipotle Barbecue Sauce:

  • In a small saucepan, combine all ingredients. Bring to a boil. Divide barbecue sauce in half. One bowl for glazing and additional for serving.

Kebobs:

  • Preheat a gas grill on high heat for 10 to 15 minutes with lid closed. Thread pork, pineapple, peppers, and onion alternating, on skewers. Place on a baking sheet and brush with half of the barbecue sauce.
  • Oil grill. Place kebabs on grill; reduce heat to medium-high, close lid and grill for 5 minutes. Turn kebabs and grill until pineapple and peppers are lightly charred and pork is cooked through, about 5 minutes longer or until internal temperature reaches 145-160 degrees. Rest for three minutes and serve with additional barbecue sauce.

  • You can make this recipe with chicken or shrimp, adapting the cooking time accordingly.
