Warm Vanilla Pudding

As a single working mother, mom didn’t always have the extra money or time to make dessert, but that’s why this easy and inexpensive dessert is near and dear to our heart. It was one of the simplest and most inexpensive desserts she made for us, her three little ones, as we enjoyed watching a little TV together.

I distinctly remember mom making vanilla pudding with milk. Growing up mom never made instant pudding, as-a-matter-of-fact, I’m not sure it existed. She would stand at the stove whisking the pudding and milk so it wouldn’t burn. Then she would pour it into small bowls, let it set, and then add banana slices and some vanilla wafers. Occasionally she would splurge for some whipped cream and we’d all take turns topping our warm pudding with lots of whipped cream. I loved it when we would finally all sit around the television after dinner to have this special dessert.

The texture of the warm pudding melted in my mouth, followed by the tender banana slices, and the crunch of the vanilla wafers. Watching mom whisking away at the stovetop patiently was worth the wait. To this day I occasionally treat my family to vanilla, Cook and Serve, pudding from a box. The ease of making this warm and delicious recipe always takes me back to those carefree times as a little kid at home. Every time I see one of those vanilla pudding boxes at the grocery store it brings back warm and fuzzy memories of us eating, laughing, and sharing a moment together as though we had not a single care in the world. I’m truly convinced that it’s the simplest things in life that make us the happiest.
