Springtime has brought warmer weather to Colorado, which means my garden is beginning to emerge from its winter slumber. My yerba buena (mint plant) is currently spreading like weeds — I call my bush of mint my “mojito garden.”

It’s hard to improve on the classic mint mojito, but as someone who loves agua de pepino (fresh cucumber water), this refreshing cucumber mojito is perfection. 

Cool mint plays gorgeously against acidic limes and sweet cucumbers for a sipping sensation that I just can’t get enough of. This yummy mixture pairs well with light-bodied white rum, but it is just as delicious as a booze-free refresher when topped with club soda.

For those of you who may be trying to cut back on sugar, you’ll be pleased to note that these delightful cucumber mojitos are lower in calories thanks to Truvia Original Sweetener. Making this simple switch will save you about 50 calories per cocktail!

  • White Rum – Don’t confuse this with coconut rum or spiced rum. You want it clear and unflavored for the brightest, freshest flavor.
  • Club Soda – Feel free to trade in sparkling water or seltzer instead.

How To Make A Cucumber Mojito

One of the best things about this simple cucumber mojito recipe is how quickly it comes together. Here’s how it’s done:

Step 1: Blend. Purée cucumber in a blender or food processor with fresh lime juice. 

Step 2: Muddle. Gently muddle lime wedges, mint, and Truvia Original Sweetener in a glass with a muddler.

Step 3: Assemble & Enjoy. Add the blended cucumber to the glass with the muddled ingredients along with rum, club soda, and fill with ice. Salud!

  • Garnishing gets you the gold. Making happy hour at home feel just as fancy as your favorite watering hole is simple: just add a garnish! Whether you do long ribbons or round slices of cucumber, lime wedges or rounds, or a big sprig of mint, you have plenty of options using the ingredients you already have on hand.
  • Muddle, don’t mangle. Muddling is the act of releasing oils from herbs like mint by pressing against the leaves gently, without bruising them. The mint oil released from the leaves during muddling – in combination with the cucumber and lime juice – give this drink it’s refreshing aroma and taste.
