Muy Bueno Honey Glazed Fig Empanadas

My BFF is visiting and we were cooking in the kitchen together when she decided to show me her new Flip video camera. We looked at each other like giddy little schoolgirls playing make-believe and it sparked an idea…Lets pretend we are filming a cooking show! This was totally impromptu and those who know me know I’d at least get a manicure, wear makeup, and have my hair done before I publish myself on YouTube, but once I saw the video I figured, hey, who really looks stunning in their own kitchen. This is real and authentic just like our cooking. If anything I hope you enjoy the recipe and the music and try not to laugh at my hand gestures and quirky expressions.

This dessert empanada recipe uses figs for a delicious flavor. You can substitute the figs for many different kinds of fruit and feel free to experiment with this recipe.

12-14 Empanadas

15-20 figs
2 tablespoons honey
lemon zest from half a lemon
3 cups flour
2 tablespoons sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup shortening
2 eggs
1/2 cup milk


Wedge figs and add honey and lemon zest and set aside.
Make pastry by combining all dry ingredients and then cut in shortening and add egg and milk.
Roll out pastry and fill with fig mixture.
Place empanadas on a greased cookie sheet and brush with egg whites.
Bake at 375 degrees for 15-20 minutes until golden brown.

    First of all, you look 10x better than I do when I’m cooking. You look natural and relaxed. Great job on the “impromptu” cooking and kudos to Rach for her taping. I think you just found yourself a videographer :) BTW, did I hear Blake in the background? lol

    You look great anyway, as do the empanadas! … I still haven’t ever laid eyes on a real fresh fig. I would so like to try one. Some day!

      You know I had NEVER cooked with figs before this — This was my FIRST experience with them. They are sooo yummy and beautiful! My uncle in El Paso, TX has a fig tree and it inspired me to find fresh figs and make something with them. Figs are hard to come by in Colorado, but I found these pretty babies at Whole Foods and they were so happy to go home with me. They are my new favorite fruit!

    Where in El Paso can I buy FRESH FIGS? I like to use them in itallian cooking with pannini sandwiches and just to eat them plain. Any help please reply to my email provided. Looks like you are all having a great time, enjoy!

      Hi Delia,

      I wish I could say where in El Paso, but I’m not positive. I live in Colorado now and normally find them at Whole Foods. Do you have a Whole Foods in EP?

      Figs have two seasons. A quick, shorter season in early summer and a second, that starts in late summer and runs through fall. You might have better luck around August/September.

      Empanadas are a little tricky to give as gifts. You might want to consider freezing after they are filled but before they are baked and give baking instructions (adding a few minutes to baking time if frozen). Unless you plan to give them soon after you make them, then YES…wonderful gift 😉
